Signia by Hilton Opens Italian Restaurant Capolinea in Atlanta

When Signia by Hilton Atlanta opened in January, local foodies waited patiently for the grand opening of Capolinea, its signature Italian-American fine dining restaurant.

I recently visited Capolinea, but only had a drink (I ate at its sister restaurant Nest). I can’t wait to try the menu.

Now Serving Atlanta Diners: Capolinea

Using high-quality ingredients in Georgia, Capolinea offers diners an inspired taste of Italy. A lot has gone into the menu at Capolinea, including research trips by Chef Jeuel Ortiz, who visited farms throughout the state as well as traveled to several cities in Northern Italy including Bologna, Florence and San Marino.

What’s On the Menu at Capolinea?

Helmed by Executive Sous Chef Jeuel Ortiz, Executive Pastry Chef Daniella Lea Rada, Director of Beverage Evan Sewell and Sommelier Marvella Castañeda, the elegant eatery features delectable handmade pastas, traditional Neapolitan pizzas and decadent desserts, featuring locally-sourced ingredients from regional purveyors.

Try the following dishes on Capolinea’s menu:

  • Neapolitan pizzas, made with a live culture flour crust proofed over two days.
  • Halibut Crudo, featuring pickled squash, finger lime, citrus and avocado.
  • Beef Carpaccio
  • Ravioli D’Anatra prepared traditionally, but elevated with kumquat gremolata.
  • Limone Ricotta Gnudi, with Georgia shrimp, ricotta dumplings, 30-month aged parmesan and dill.
  • Whole Branzino and more.

Dishes are complemented by an extensive wine and cocktail program, including prosecco upon arrival and an immersive tableside martini service.
